Beer Cheese Soup.

You will need: 1 bottle of Barley Island Blind Tiger IPA. A cup each of chopped carrots, celery, and onions. Vegetable oil, 2 tbsp flour, 3 cans chicken soup stock, 2 cups grated cheddar cheese, 1/2 tbsp. dry mustard, 1/8 tbsp hot sauce, 1/8 tbsp Worchestershire sauce.

Sautee carrots, celery, and onions in some oil until brown.

Bring soup stock to boil. Add vegetables and simmer for 30 minutes. Dredge cheese in the flower and add into soup. Stir for 5 minutes. Add other ingredients including beer.

Serve with bread. Add salt/pepper to taste. Yum!
